This very simple yet delicious food is possibly the most common Mediterranean dish there is. It can be eaten hot or cold with a multitude of toppings.
Wholemeal brown bread (think cob)
Cut thin slices of bread, rub tomatoes on bread, sprinkle salt and drizzle olive oil.
Top with literally anything you love! Marinated tofu, basil leaves, roasted vegetables, vegan cheese.... Imagination is key. MUST be served with a side of olives, pickles and a very cold beer.
